Just looking for a tried and true method to set the tension correctly. The idea of extruding some filament and then backing the filament out is a good idea. Should "bite" marks from the hobb gear be visible at all when properly tensioned?

Yes, you should see/feel teeth marks on most filament types. Count the number of thumb wheel turns. The number of turns for you may not be the same for others due to differences in filament diameter and spring tolerance between kits.

Note: you don't want to over tension as this will oval the filament causing more problems.
